01 — Overview

Description

Beetroot (Beta vulgaris) processed into a fine powder by spray-drying of beet juice or air-drying of whole beet slices, used both as a natural pigment and as a functional ingredient targeting sport and cardiovascular applications.

Deep red to magenta free-flowing powder with characteristic earthy aroma and slightly sweet flavor. The intense color comes from betalain pigments, which are unique to the beet family and chemically distinct from anthocyanins.

Introduction

Beetroot has experienced strong growth in the functional food and sport nutrition categories driven by clinical research on dietary nitrate and exercise performance.

Beetroot is among the highest natural sources of dietary nitrate, which is converted in the body to nitric oxide, a signaling molecule involved in blood vessel dilation. Studies have linked beet juice consumption to modest improvements in endurance exercise performance and blood pressure markers.

The betalain pigments responsible for the intense red color include betacyanins (red) and betaxanthins (yellow), which together produce the magenta hue of fresh beets. These pigments are pH-stable in a narrower range than anthocyanins and are typically used in applications between pH 3 and 7.

Plant-based meat manufacturers have adopted beet powder as a natural red coloring system in burger and sausage analogs, supporting the visual transition from raw red to cooked brown that consumers expect from conventional meat.
