Anserine is a natural dipeptide isolated from chicken muscle in 1929. The compound consists of beta-alanine bonded to 1-methyl-histidine, distinguishing it from carnosine (beta-alanine bonded to histidine without methylation). Anserine occurs at high concentrations in poultry and tuna muscle.
Industrial production proceeds by extraction from chicken-meat or fish-muscle hydrolysate, followed by chromatographic purification, or by chemical synthesis from beta-alanine and 1-methyl-histidine.
Regulatory status varies by jurisdiction. Approved as a food ingredient in Japan and China; classified on a case-by-case basis in other markets.
The compound's antioxidant and pH-buffering properties are similar to carnosine, but anserine has lower hydrolysis sensitivity to serum carnosinase, providing slightly better bioavailability after oral administration.
