Introduction
Acai berry is harvested from the acai palm native to the Amazon basin, where the fruit has been a staple food for indigenous peoples for centuries. Industrial production proceeds by pulping fresh acai fruit (which spoils rapidly), followed by pasteurization and spray-drying or freeze-drying. Standardized extracts use additional polyphenol concentration steps.
