Introduction
Iodine is an essential trace element required for the synthesis of thyroid hormones (thyroxine and triiodothyronine), which regulate basal metabolic rate, growth, and neurological development. Iodine deficiency remains the leading cause of preventable intellectual disability globally and is addressed through universal salt iodization programs supported by WHO, UNICEF, and ICCIDD.
Industrial production uses reaction of iodine with potassium hydroxide solution, with hydrogen peroxide added to convert the intermediate iodate back to iodide, followed by evaporation, crystallization, and drying under controlled atmosphere. Potassium iodate is the preferred form for salt iodization due to superior stability in humid tropical climates, while potassium iodide is the standard for pharmaceutical and supplement use.
