Introduction
Cassia seed (jue ming zi) has been used in Traditional Chinese Medicine for over 1,500 years primarily for eye-health applications including 'liver heat' patterns associated with red eyes and blurred vision. The seeds are also consumed as a roasted tea throughout China and Korea.
Industrial production proceeds by hot-water or hydroalcoholic extraction of dried cassia seeds, followed by concentration and spray-drying. Roasting prior to extraction is common for tea-style applications and reduces the bitter principle.
