Description

The extract of Caraway seeds (Carum carvi), supplied as essential oil, oleoresin, and standardized powder extract. The essential oil is dominated by S-(+)-carvone (50 to 65 percent) and limonene (30 to 40 percent). Used in Central European flavor applications, digestive-support supplements, and the established peppermint-caraway combination for functional dyspepsia.

Caraway has been used in Central European cuisine and traditional medicine since at least ancient Roman times. The spice is closely associated with Central and Northern European foodways, providing the characteristic flavor of rye bread, sauerkraut, and Aquavit. Modern cultivation is dominated by the Netherlands, Eastern Europe, and Egypt.

Industrial production proceeds by steam distillation (essential oil), solvent extraction (oleoresin), and aqueous or hydroalcoholic extraction (supplement-grade powder extracts). The seed essential oil yield is typically 3 to 7 percent of dry seed weight.

Recognized as a permitted food ingredient by the U.S. FDA (GRAS), the European Food Safety Authority, and equivalent regulators worldwide. The European Medicines Agency has issued monographs for caraway as a traditional herbal medicine for digestive complaints.
